As a Virgin Vegan hot on the heels of the New Year, one might believe it is difficult and daunting to find fun and delicious things to eat. I’m here to prove that theory wrong! You can create some great and delicious meals rather quickly on a Vegan diet (I’m also off all oil of any kind to help lower my cholesterol) and I’m about to share with you my original recipe for Dave’s Vegan Italian Tacos! This recipe will make four soft-shell tacos.

Each soft-shell taco is only 78 calories!

Ingredients

3 Portabella Mushroom tops
A Few Dashes of any Vegan Worcestershire Sauce
A Few Dashes of Modena Balsamic Vinegar
Fresh Spinach Greens
A Plop of Gulden’s Mustard
A Fistful of Sun Dried Tomatoes
4 Whole Wheat Tortillas
2 Cloves Chopped Garlic
Preparation

Slice the mushroom tops into strips
Chop the Spinach
Dump the mushrooms into a non-stick frying pan on medium heat
Add the Worcestershire Sauce
Add the Balsamic Vinegar
Cook for 4 minutes
Add the Spinach and toss ingredients to mix flavors
Continue to cook for 4 more minutes
Add Garlic
Add Mustard
Add Sun Dried Tomatoes
Toss everything to mix tastes
Heat up soft Tortillas
Divide pan contents into four equal sections
Conquer each soft Tortilla with each section

Conclusion
