It’s time for Partatoes!  “Partatoes” is one of those delightful, made-up, words that I love to invent that actually instantly means something.  Partatoes is the combination of parsnips (the “PAR-” part) and white potatoes (the “-TATOES” part) into a communal mash that makes the best tasting “Partatoes” since the invention of smashed ‘taters.

Sour Cream Potatoes

This side dish is good with almost any meal, even with sandwiches
Servings: Ingredients:


Adjust recipe for smaller amount


Topping kids like: Crushed Potato Chips

6 large potatoes, boiled and diced

2 cups sharp cheddar cheese, shredded

1/3 cup chopped green onions

1/4 cup butter

1 tsp salt

1 tsp pepper

2 cups sour cream

  1. Mix all the ingredients together and put into a baking pan. Sprinkle paprika on top.
  1. Bake at 350 degrees for about 30 minutes.

Diced Ham

Mushroom Soup

1 large package frozen hash-brown potatoes

1 can cream of potato soup

1 can cream of celery soup

salt and pepper

parsley flakes


chopped onions, optional

chopped green pepper, optional

  1. Preheat oven to 300 degrees. Mix everything together except parsley and paprika. Let sit until mixing is easy. Then put into a 9 x 13 inch baking pan. Sprinkle paprika and parsley on top.
  1. Bake for 1 1/2 hours. Serve while hot.
