Put the chopped apples in a small bowl. Add 1/2 cup of the unbleached white flour. Toss apples in the flour, then set aside.
In a mixing bowl combine remaining unbleached while flour, the whole wheat flour, 1/2 cup of the brown sugar, baking powder, salt and 1/4 teaspoon of the cinnamon.
Add oil, milk and egg then stir mixture with a wire whisk until all the dry ingredients are moistened. Stir in the chopped apples.
Pour batter into a 10″round nonstick baking pan. Combine the remaining 1 tablespoon of brown sugar and 1/4 teaspoon cinnamon. Sprinkle over the cake. Bake at 400 degrees for 30 minutes or until a toothpick inserted into the center comes out clean.
